Sizzling Chicken recipe

Sizzling Chicken in Pepper Garlic Sauce.

The word ‘sizzle’ literally means to burn with a hissing sound. This dish derives its name from the sizzling sound that it produces. Grilled meat or veggies are piled up on a ‘SUPER HOT’ iron plate and a gravy or sauce is poured over it producing a loud sizzling and very appetising sound … It is served with the smoke still emancipating from the dish… That is what makes this dish unique. Sharing here my style of preparing it as per our liking based on various recipes I found on the internet. The procedure is a little time consuming and requires a little preparation before hand..but trust me its worth every effort.
*** Vegetarians can simply replace the chicken with Paneer or tofu.
INGREDIENTS :
FOR THE VEGETABLES :
cauliflower florets 100 gms
french beans cut into vertical strips 100 gms
carrots cut into vertical strips 100 gms
green peas a fistful
You can take more veggies like spinach, cabbage, capsicum etc but I preferred less veggies and more of the chicken .
METHOD :
1. Boil/Blanch the veggies in salted water till cooked.
2. Drain the water and keep aside.
FOR THE GRILLED CHICKEN : (Vegetarians can simply replace the chicken with Paneer ie. cottage cheese or tofu. )
boneless chicken breast cut into strips  250 gms
Honey 1 tbsp
Red chilly sauce 1 Tbsp
Crushed pepper 1 tsp
Pepper sauce (Easily available in market)  2 Tbsp (Adjust as per taste)
Soy sauce   1 Tbsp
Little Oil
Salt to taste .
METHOD :
1. Clean and cut the chicken into thin strips ( Makes it easier/Faster  to cook)
2. In a bowl take the chicken strips and add the above mentioned ingredients(For grilled chicken)
3. Mix well. Keep covered and marinate in the refrigerator for at least half an hour.
4. Heat a non stick pan or a grill pan. Add around 2 tsp of oil . Add the marinated chicken and  keep stirring till its well cooked on all sides.
5. Keep aside.
FOR THE FRENCH FRIES.
1. Either use the ready to fry fries easily available in the market and fry them
2. Peel and cut potatoes into long finger chips.
3. Boil in salt water.
4. Drain completely and deep fry in Hot Oil.
5. Keep aside.
FOR THE PEPPER GARLIC SAUCE :
INGREDIENTS :
1. Oil 2 tsp
2. Finely chopped garlic   1 tsp
3. Soy sauce 1 Tbsp
4. Black pepper sauce (Readily available)   around 1 Bowl ..
5, Schezwan sauce  1 tsp
6. Salt to taste
7. Sugar 1 to 2 tsp
8. Water as required
9. Corn flour paste (To thicken the sauce if required)
METHOD :
1. In a pan, heat the Oil.
2. Add the chopped garlic.
3. Add ingredients 3 to 7
4. Bring to a nice boil.
5. Add water as per the quantity you wish to prepare . The sauce should not be very watery.
6. Finally add the cornflour paste to this if you feel the sauce needs to thicken .
NOW THE MOST IMPORTANT STEP :
ASSEMBLING THE SIZZLER : (Special sizzler plates are easily available in the market nowadays . It is a heavy iron plate with a wooden base. The base and the plate are separate)
1.  Heat the iron plate (Sizzler plate) on the gas with full flame till it is really really hot. Be very careful while handling this plate.
2. Make sure the sauce is also boiling hot.
3. On the heated plate arrange french fries on one side, the meat (Chicken) in the centre and blanched veggies on one side.
4. Pour the boiling hot sauce over this to cover all the three portions. A loud sizzling sound will be accompanied with lot of smoke…
5. Immediately transfer this to the wooden plate very carefully and serve while it is still sizzling.
6. Enjoy your sizzler !!!.
